Every Sunday morning is pancake morning for the Boehme family. Its become a cozy tradition we look forward to year round.
There are some mornings where I wake up and want a twist on our traditional blueberry pancake. This Autumn I came up with a recipe representing our beautiful Washington State apples.
First things first, the pancake mix is SIMPLE and a great mix to make in bulk. In small ways, we try to keep homemade products in the house rather than always buying boxed foods. I’m not saying this is a hard fast rule, we can’t make everything by hand, but pancake mix is so easy, so why not stay away from ingredients we’ve never heard of?? To make your bulk dry mix easier to throw together, I’ve made a free printable recipe card you can print and keep handy! SEE BELOW.
Grab a large container with an airtight lid… and here’s the dry ingredients recipe:
- 3 tsp baking powder
- 1 1/2 cup white flour
- 1 tsp salt
- 1 TB white sugar
I multiply this recipe by 4 for my bulk container and each Sunday morning I measure out 1 1/2 cups to add to my liquid ingredients.
- 1 large egg
- 1 1/4 cup milk
- 2 TB butter – for skillet
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 small diced apple
Mix with dry ingredients and cook batter over medium heat. Warm up your maple syrup in a glass container and pour over… maybe whip up some cinnamon whipped cream to top it off! ENJOY your Sunday morning breakfast as if you were in the PNW with the Boehme’s.
